Cake doesn't have to be just for dessert anymore, not when it is made with blueberries or any tasty berry you desire. The combination of juicy berries, lemon zest, and of course plenty of sugar and make this cake a breakfast winner. All you need is: 1/2 cup butter, zest from 1 large lemon, 1 cup sugar, an egg (room temp), 1 tsp. vanilla, 2 cups flour (1/4 cup is used to toss with the blueberries), 2 tsp baking powder, 1 tsp. salt and 2 cups blueberries (or any other berry you desire), plus 1/2 buttermilk (if you don't have any, juice of one lemon mixed with 1/2 cup reg. milk will suffice. )
Now preheat oven to 350 and cream (softened) butter with the lemon zest and sugar. Next add egg and vanilla, beat until combined. Toss blueberries (or whichever berry you chose) with 1/4 cup of flour, then whisk together remaining flour, baking powder, and salt. Add half the mixture to the batter and stir with spatula/wooden spoon until mixed. Then add all the buttermilk, stir, and add remaining flour. Gently, fold in berries.
Add mixture to a greased 8 or 9 inch square pan. Spread and sprinkle with cinnamon sugar on top (my secret ingredient) and bake for 35-45 mins or until toothpick inserted in middle comes out clean.
